
Chef Residency 2026: Areum Yoon's Korean cuisine stars in Milan With Prosecco DOC

The third stage of Chef Residency 2026, the project promoted by the Consortium for the Protection of Prosecco DOC in collaboration with Tuorlo, has ended, which continues to bring some of the most interesting voices in international gastronomy to Milan. After the residencies dedicated to Brazil and South Korea, the calendar will continue with Canada, on September 29, and with the United Kingdom, on October 12.
Chef Areum Yoon stars in the Chef Residency dedicated to South Korea
From 12 to 15 July, the spaces of House of Mediterraneo hosted a residence entirely dedicated to Korean gastronomic culture, led by Chef Areum Yoon, one of the protagonists of the new international culinary scene. Through masterclasses, practical activities and moments of discussion, young professionals and chefs have shared techniques, ingredients and visions, creating a path of training and cultural contamination.
The final dinner celebrated the flavors of South Korea
Closing the experience was the final dinner on July 15, during which guests embarked on a journey into the flavors of South Korea through a menu designed to enhance the country's gastronomic tradition, accompanied by a selection of Prosecco DOC designed to enhance the combinations.
Each course told an aspect of Korean cuisine, including fermentations, textures and flavor contrasts, interacting with a selection of Prosecco DOC able to enhance every nuance. From references to white kimchi to combinations with shiitake mushrooms, doenjang vinaigrette (fermented soybean paste) and omija chili pepper, the gastronomic journey has intertwined Korean traditions and ingredients from the Italian territory, such as red shrimp, grouper, scallop, pumpkin flower, peach and apricot, confirming the versatility of Prosecco DOC in accompanying world cuisines.
A project that brings different gastronomic cultures into dialogue
The residency also saw the collaboration of Milan Loves Seoul, which fostered cultural dialogue between Italy and South Korea, the culinary studio Tavolata, responsible for the creative direction of the experience, and the Maestro Martino Food Academy, represented by chef William Caputo, who supported Chef Areum Yoon during all working days.
The next stages of Chef Residency 2026
Chef Residency thus continues to confirm itself as a project dedicated to training, the exchange of skills and the enhancement of international gastronomic cultures, with Prosecco DOC as an interpreter of a conviviality capable of uniting territories, people and traditions. The journey will continue with the residence dedicated to Canada, scheduled for September, and with the one dedicated to the United Kingdom, scheduled for October, both hosted once again at the House of Mediterraneo in Milan.
